1. | Preheat your oven to 300°F (150°C). |
2. | In a medium saucepan, whisk together the coconut milk, granulated sugar, cornstarch, aquafaba, vanilla extract, and salt until combined. |
3. | Cook the mixture over medium heat, whisking constantly, until it thickens and begins to bubble. |
4. | Once the mixture has thickened, remove it from heat and divide it evenly among 4-6 ramekins. |
5. | Place the ramekins in a large baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins. |
6. | Bake the ramekins for 45-50 minutes, or until the custard is set but still jiggly in the center. |
7. | Once the custards have baked, remove them from the oven and let them cool to room temperature. |
8. | Once cooled, cover each ramekin with plastic wrap and refrigerate for at least 2 hours or overnight. |
9. | Just before serving, remove the custards from the fridge and sprinkle the turbinado sugar evenly over the tops of the custards. |
10. | Using a kitchen torch, carefully caramelize the sugar until it turns golden brown and bubbly. |
11. | Let the custards sit for a minute or two before serving to allow the caramelized sugar to harden. |
Tips:
- Make sure to use full-fat coconut milk for a rich and creamy custard.
- Be sure to whisk the custard constantly to prevent lumps from forming.
- If you don't have a kitchen torch, you can also caramelize the sugar by placing the custards under the broiler for a few minutes, watching closely to avoid burning.
