1. 1 cup green or brown lentils
2. 6-8 large peaches, peeled and sliced
3. 1/2 cup granulated sugar
4. 1/4 cup brown sugar
5. 1/4 cup cornstarch
6. 1 teaspoon cinnamon
7. 1/4 teaspoon nutmeg
8. 1/4 teaspoon salt
9. 1 tablespoon lemon juice
10. 1 tablespoon butter, cut into small pieces
11. 1 egg yolk, beaten

1. Preheat oven to 375°F.
2. Roll out one pie crust and line a 9-inch pie dish. Trim any excess dough and set aside.
3. In a large bowl, mix together the sliced peaches, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, and lemon juice until well combined.
4. Pour the peach filling into the prepared pie crust. Dot the top with small pieces of butter.
5. Roll out the second pie crust and cut it into strips. Lay the strips over the top of the pie, weaving them to create a lattice pattern.
