6. | 1/2 cup red wine |
7. | 2 cups vegetable broth |
8. | 2 tbsp tomato paste |
9. | 1 tsp dried thyme |
10. | 1 bay leaf |

12. | 2 tbsp olive oil |
13. | 1 lb baby potatoes, halved or quartered |
14. | 1 cup mushrooms, sliced |
15. | 2 tbsp all-purpose flour (use gluten-free flour for a GF version) |
16. | Chopped fresh parsley or thyme, for garnish (optional) |

1. | Preheat the oven to 375°F (190°C). |
2. | In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant and slightly softened. |
3. | Add the carrots and celery to the pot and cook for another 5-7 minutes until they start to soften. |
4. | Add the vegan beef crumbles or chickpeas to the pot and stir to combine. |
5. | Sprinkle the flour over the mixture and stir to coat. |
6. | Add the red wine to the pot and stir well to deglaze. Cook for 2-3 minutes until the wine has reduced slightly. |
7. | Add the vegetable broth, tomato paste, thyme, bay leaf, and a pinch of salt and pepper. Stir to combine. |
8. | Add the potatoes and mushrooms to the pot, making sure they're submerged in the liquid. |
9. | Cover the pot with a lid and transfer to the oven. Bake for 1 hour. |
10. | After 1 hour, remove the pot from the oven and give it a good stir. If the sauce is too thin, return the pot to the oven (uncovered) and bake for another 15-20 minutes until the sauce has thickened to your liking. |
11. | Discard the bay leaf and season with additional salt and pepper, if needed. |
