1. 1 package of vegan beef crumbles or 1 can of chickpeas, drained and rinsed
2. 1 large onion, diced
3. 3 cloves garlic, minced
4. 3 carrots, peeled and sliced
5. 2 stalks celery, sliced
6. 1/2 cup red wine
7. 2 cups vegetable broth
8. 2 tbsp tomato paste
9. 1 tsp dried thyme
10. 1 bay leaf
11. Salt and pepper, to taste
12. 2 tbsp olive oil
13. 1 lb baby potatoes, halved or quartered
14. 1 cup mushrooms, sliced
15. 2 tbsp all-purpose flour (use gluten-free flour for a GF version)
16. Chopped fresh parsley or thyme, for garnish (optional)

Steps of Vegan Beef Bourguignon Recipe

# Steps
1. Preheat the oven to 375°F (190°C).
2. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant and slightly softened.
3. Add the carrots and celery to the pot and cook for another 5-7 minutes until they start to soften.
4. Add the vegan beef crumbles or chickpeas to the pot and stir to combine.
5. Sprinkle the flour over the mixture and stir to coat.
6. Add the red wine to the pot and stir well to deglaze. Cook for 2-3 minutes until the wine has reduced slightly.
7. Add the vegetable broth, tomato paste, thyme, bay leaf, and a pinch of salt and pepper. Stir to combine.
8. Add the potatoes and mushrooms to the pot, making sure they're submerged in the liquid.
9. Cover the pot with a lid and transfer to the oven. Bake for 1 hour.
10. After 1 hour, remove the pot from the oven and give it a good stir. If the sauce is too thin, return the pot to the oven (uncovered) and bake for another 15-20 minutes until the sauce has thickened to your liking.
11. Discard the bay leaf and season with additional salt and pepper, if needed.
12. Serve the Vegan Beef Bourguignon hot, garnished with chopped fresh parsley or thyme, if desired.

  • To make this dish gluten-free, use a gluten-free flour in place of the all-purpose flour.
