# Ingredients
1. 1 block of firm tofu, drained and pressed
2. 1 tablespoon cornstarch
3. 1 tablespoon soy sauce
4. 1 tablespoon rice vinegar
5. 1 tablespoon vegetable oil
6. 2 garlic cloves, minced
7. 1 tablespoon grated ginger
8. 1 red bell pepper, sliced
9. 1 yellow bell pepper, sliced
10. 1 small onion, sliced
11. 1 cup broccoli florets
12. 1 cup sliced mushrooms
13. Salt and pepper to taste
14. 2 tablespoons chopped green onions, for garnish
15. For the sauce:
16. 1/4 cup soy sauce
17. 1 tablespoon cornstarch
18. 1 tablespoon rice vinegar
19. 1 tablespoon maple syrup
20. 1 teaspoon sesame oil

Steps of Vegan tofu and vegetable stir-fry Recipe

# Steps
1. Cut the tofu into small cubes and toss with 1 tablespoon of cornstarch until coated. In a small bowl, mix together 1 tablespoon of soy sauce and 1 tablespoon of rice vinegar. Pour the mixture over the tofu and stir to coat evenly.
2. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger and stir for 1 minute.
3. Add the sliced red and yellow bell peppers, onion, broccoli, and mushrooms to the skillet and stir-fry for 5-7 minutes or until the vegetables are tender.
4. In a small bowl, whisk together the soy sauce, cornstarch, rice vinegar, maple syrup, and sesame oil to make the sauce.
5. Push the vegetables to the sides of the skillet and add the tofu to the center. Stir-fry the tofu for 2-3 minutes or until lightly browned.
6. Pour the sauce over the tofu and vegetables and stir-fry for an additional 1-2 minutes until the sauce thickens and coats the tofu and vegetables.
7. Season with salt and pepper to taste.
8. Garnish with chopped green onions and serve the vegan tofu and vegetable stir-fry hot with rice or noodles.
Tips:
  • To press the tofu, place it between two plates and weigh down the top plate with something heavy (like a can of beans). Let it sit for 10-15 minutes to press out the excess liquid.
  • If you prefer a spicier stir-fry, add a pinch of red pepper flakes to the sauce.
  • This stir-fry is delicious served over rice or noodles.
