1. 4 large potatoes, peeled and cubed
2. 2 tbsp vegan butter
3. 1/4 cup unsweetened almond milk
4. 1 tbsp olive oil
5. 1 onion, chopped
6. 3 cloves garlic, minced
7. 2 medium carrots, peeled and chopped
8. 2 stalks celery, chopped
9. 1 cup frozen peas
10. 1 cup cooked lentils
11. 1 cup vegetable broth
12. 1 tsp dried thyme
13. 1 tsp dried rosemary
14. Salt and black pepper, to taste

# Steps
1. Preheat the oven to 375°F.
2. Boil the cubed potatoes in salted water until tender, about 15-20 minutes.
3. Drain the potatoes and mash them with vegan butter and almond milk until smooth. Season with salt and black pepper to taste.
4. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until softened, about 5 minutes.
5. Add the chopped carrots and celery and cook for another 5 minutes.
6. Stir in the cooked lentils, frozen peas, vegetable broth, dried thyme, and dried rosemary. Cook for another 5-7 minutes until the vegetables are tender and the mixture is heated through.
7. Season with salt and black pepper to taste.
8. Spread the lentil and vegetable mixture into a 9x13 inch baking dish.
9. Spread the mashed potatoes evenly over the top of the lentil mixture.
10. Bake in the preheated oven for 25-30 minutes, or until the top is lightly browned and the filling is bubbling.
