1. | Preheat the oven to 375°F. |
2. | Boil the cubed potatoes in salted water until tender, about 15-20 minutes. |
3. | Drain the potatoes and mash them with vegan butter and almond milk until smooth. Season with salt and black pepper to taste. |
4. | In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until softened, about 5 minutes. |
