2. 1/2 cup all-purpose flour
3. 1/2 cup plant-based milk
4. 1 cup breadcrumbs
5. 1/2 teaspoon paprika
6. 1/2 teaspoon garlic powder
7. 1/2 teaspoon onion powder
8. Salt and pepper, to taste
9. 2-3 tablespoons vegetable oil

1. Cut the seitan into 4-6 even pieces, and then flatten each piece slightly with a meat mallet or rolling pin. Season the seitan with salt and pepper on both sides.
2. In a shallow bowl, mix together the flour and a pinch of salt. In another shallow bowl, whisk together the plant-based milk and a pinch of salt.
3. In a third shallow bowl, mix together the breadcrumbs, paprika, garlic powder, onion powder, and a pinch of salt.
4. Dip each piece of seitan in the flour mixture, then in the plant-based milk mixture, and then in the breadcrumb mixture, pressing the breadcrumbs onto the seitan to ensure a good coating.
5. Heat the vegetable oil in a large skillet over medium heat. Once hot, add the seitan to the skillet and cook for about 5-7 minutes on each side, until golden brown and crispy.
6. Once cooked, transfer the schnitzel to a paper towel-lined plate to drain any excess oil.
7. Serve the schnitzel hot with your favorite side dishes, such as mashed potatoes or roasted vegetables.
Tips:
  • Seitan can be homemade or store-bought. If using store-bought, be sure to check the ingredients to ensure it's vegan.
  • Use a meat mallet or rolling pin to flatten the seitan evenly, making sure it's not too thin or too thick.
  • Adding spices to the breadcrumb mixture can add extra flavor and depth to the schnitzel.
  • If you prefer a gluten-free version, try using gluten-free breadcrumbs or crushed cornflakes instead.
