1. 1 tbsp of olive oil
2. 1 onion, chopped
3. 3 cloves of garlic, minced
4. 1 tsp of dried thyme
5. 1 tsp of dried rosemary
6. 1 tsp of paprika
7. 1/2 tsp of ground cumin
8. 1/2 tsp of ground coriander
9. 1/4 tsp of ground cinnamon
10. 1/2 cup of cooked and mashed chickpeas
11. 1/2 cup of breadcrumbs
12. 1 tbsp of tomato paste
13. Salt and pepper to taste
14. 1 sheet of vegan puff pastry
15. 1 tbsp of plant-based milk for brushing

Steps of Vegan Sausage Rolls Recipe

# Steps
1. Preheat the oven to 375°F (190°C).
2. Heat the olive oil in a large skillet over medium heat.
3. Add the onions and sauté for 2-3 minutes until translucent.
4. Add the garlic, thyme, rosemary, paprika, cumin, coriander, and cinnamon to the pan. Sauté for another minute until fragrant.
5. Add the mashed chickpeas, breadcrumbs, and tomato paste to the pan. Mix well.
6. Season the mixture with salt and pepper to taste.
7. Remove the mixture from heat and let it cool for a few minutes.
8. Unroll the vegan puff pastry sheet and cut it into 12 rectangles.
9. Spoon the sausage mixture onto each rectangle, leaving a small border around the edges.
10. Roll the pastry up tightly, sealing the edges with a bit of water if necessary.
11. Repeat with the remaining rectangles of pastry and sausage mixture.
12. Place the sausage rolls on a baking sheet lined with parchment paper.
13. Brush the tops of the sausage rolls with plant-based milk.
14. Bake the sausage rolls in the oven for 20-25 minutes until they are golden brown and puffed.
15. Serve the sausage rolls warm with ketchup or your favorite dipping sauce.
Tips:
  • For extra flavor, you can add a splash of soy sauce or liquid smoke to the sausage mixture.
  • If you don't have cooked chickpeas, you can use canned chickpeas instead. Just be sure to rinse and drain them before mashing.
  • You can prepare the sausage mixture in advance and store it in the refrigerator until you're ready to assemble the sausage rolls.
  • Leftover sausage rolls can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven at 350°F (175°C) for 10-15 minutes before serving.
