1. 4 large portobello mushrooms
2. 1 tablespoon olive oil
3. 1 onion, diced
4. 2 garlic cloves, minced
5. 1 red bell pepper, diced
6. 1 zucchini, diced
7. 1 carrot, grated
8. 1 cup cooked quinoa
9. 1/4 cup chopped fresh parsley
10. Salt and black pepper, to taste
11. Vegan cheese (optional)

# Steps
1. Preheat the oven to 375°F (190°C).
2. Remove the stems and gills from the mushrooms and wipe them clean with a damp cloth. Place the mushrooms on a baking sheet lined with parchment paper.
3. In a large skillet, heat the olive oil over medium heat.
4. Add the onion and garlic and sauté until the onion is soft and translucent, about 5 minutes.
5. Add the diced red bell pepper, zucchini, and grated carrot to the skillet and cook for 5-7 minutes or until the vegetables are tender.
6. Add the cooked quinoa and chopped parsley to the skillet and stir to combine.
7. Season the mixture with salt and black pepper to taste.
8. Spoon the quinoa and vegetable mixture into the mushroom caps, dividing it evenly among them.

10. Bake the stuffed mushrooms in the preheated oven for 20-25 minutes or until the mushrooms are tender and the cheese is melted (if using).
11. Serve the stuffed mushrooms hot, garnished with additional parsley if desired.
