7. 2 tablespoons unsweetened almond milk
8. 1 tablespoon vanilla extract
9. 1/4 teaspoon salt

1. Preheat the oven to 350°F (180°C).
2. In a medium bowl, whisk together the maple syrup, coconut sugar, cornstarch, melted vegan butter, almond milk, vanilla extract, and salt until well combined.
3. Stir in the pecan halves.
4. Pour the mixture into the unbaked vegan pie crust.
5. Bake for 50 to 55 minutes, or until the filling is set.
6. Remove the pie from the oven and let it cool to room temperature before slicing and serving.
Tips:
  • Make sure the vegan butter is cold when you mix it into the flour mixture for the crust. This will help create a flaky and tender crust.
  • If the dough is too dry, add a little more ice water, 1 tablespoon at a time, until it comes together in a ball.
