13. | 1 teaspoon of smoked paprika |
14. | 1 teaspoon of dried oregano |
15. | Salt and black pepper to taste |

Steps of Vegan Paella Recipe

1. | Rinse the rice in a fine-mesh strainer and set it aside. |
2. | In a small bowl, combine the vegetable broth and saffron and set it aside. |
3. | In a large skillet or paella pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until they become translucent. |
4. | Add the bell peppers, zucchini, green beans, and artichoke hearts and sauté for 5-7 minutes until they start to soften. |
5. | Add the diced tomatoes, smoked paprika, oregano, salt, and black pepper to the pan and stir to combine. |
6. | Add the rice to the pan and stir until the rice is coated with the vegetable mixture. |
7. | Pour in the saffron-infused broth and bring it to a boil. |
8. | Lower the heat to low and simmer for 30-35 minutes or until the rice is cooked and the liquid has been absorbed. |
9. | Stir in the green peas and cook for another 5-7 minutes until they are heated through. |
10. | Remove the pan from the heat and let it sit for 5-10 minutes before serving. |
11. | Garnish with chopped parsley and serve hot. |
Tips:
- If you don't have a paella pan, you can use a large skillet instead.
- You can add any vegetables you like to this dish, such as mushrooms, carrots, or eggplant.
- If you want to add some protein, you can add some cooked chickpeas or tofu to the dish.
- To make the dish gluten-free, make sure to use gluten-free vegetable broth.
