Ingredients for Vegan Pad Thai

1. 8 ounces rice noodles
2. 3 tablespoons vegetable oil
3. 3 cloves garlic, minced
4. 1 red bell pepper, sliced
5. 1 yellow onion, sliced
6. 8 ounces sliced mushrooms
7. 2 tablespoons soy sauce
8. 2 tablespoons rice vinegar
9. 2 tablespoons brown sugar
10. 2 tablespoons peanut butter
11. 1 teaspoon sriracha (optional)
12. 1/2 cup peanuts, chopped
13. 1/4 cup fresh cilantro, chopped
14. 1 lime, cut into wedges

Steps of Vegan Pad Thai

# Steps
1. Cook the rice noodles according to the package instructions. Drain and set aside.
2. In a large wok or frying pan, heat the vegetable oil over medium-high heat.
3. Add the garlic, red bell pepper, onion, and mushrooms to the pan. Cook until the vegetables are tender and the mushrooms are browned, about 5-7 minutes.
4. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, peanut butter, and sriracha (if using).
5. Add the cooked rice noodles to the pan with the vegetables. Pour the sauce over the noodles and stir to combine.
6. Cook for another 2-3 minutes, until the noodles are evenly coated in the sauce.
7. Remove the pan from heat and stir in the chopped peanuts.
8. Serve the pad Thai in bowls, garnished with cilantro and a wedge of lime.
