Steps |

Cook the rice noodles according to the package instructions. Drain and set aside. |

In a large wok or frying pan, heat the vegetable oil over medium-high heat. |

Add the garlic, red bell pepper, onion, and mushrooms to the pan. Cook until the vegetables are tender and the mushrooms are browned, about 5-7 minutes. |

In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, peanut butter, and sriracha (if using). |

Add the cooked rice noodles to the pan with the vegetables. Pour the sauce over the noodles and stir to combine. |

Cook for another 2-3 minutes, until the noodles are evenly coated in the sauce. |

Remove the pan from heat and stir in the chopped peanuts. |

Serve the pad Thai in bowls, garnished with cilantro and a wedge of lime. |
