2. 1 large onion, diced
3. 3 cloves garlic, minced
4. 1 tablespoon olive oil
5. 2 tablespoons all-purpose flour
6. 2 cups vegetable broth
7. 1/2 cup vegan sour cream
8. 1 teaspoon Dijon mustard
9. 1 teaspoon smoked paprika
10. Salt and pepper to taste
11. 8 oz. cooked pasta or noodles

# Steps
1. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until the onions are translucent.
2. Add the sliced mushrooms to the skillet, and cook until they release their moisture and start to brown, about 5-7 minutes.
3. Sprinkle the flour over the mushrooms and onions, and stir until the flour is well distributed. Cook for an additional 1-2 minutes.
4. Slowly pour in the vegetable broth, stirring constantly to prevent lumps from forming. Add the Dijon mustard and smoked paprika, and stir until the sauce thickens.
5. Reduce the heat to low and let the mushroom stroganoff simmer for 5-10 minutes. Season with salt and pepper to taste.
6. Stir in the vegan sour cream, and cook for an additional 2-3 minutes.
7. Serve the mushroom stroganoff over cooked pasta or noodles.
