Ingredients for Vegan Mashed Potatoes

1. | 2 lbs (900 g) of potatoes, peeled and chopped |
2. | 1/4 cup (60 ml) of unsweetened almond milk |
3. | 2 tablespoons (30 g) of vegan butter |
4. | Salt and pepper, to taste |
5. | Fresh chives, chopped, for garnish (optional) |
Steps of Vegan Mashed Potatoes

1. | Put the chopped potatoes in a large saucepan and cover with water. |
2. | Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. |
3. | Drain the potatoes and return them to the saucepan. |
4. | Mash the potatoes with a potato masher or a fork. |
5. | Add the almond milk and vegan butter to the mashed potatoes and continue to mash until well combined and smooth. |
6. | Season with salt and pepper to taste. |
7. | If desired, garnish with chopped chives. |
