1. 1 package of lasagna noodles
2. 2 large bell peppers, chopped
3. 2 large onions, chopped
4. 4 garlic cloves, minced
5. 2 cups of sliced mushrooms
6. 2 cans of diced tomatoes
7. 2 tablespoons of tomato paste
8. 2 tablespoons of dried basil
9. 1 teaspoon of dried oregano
10. Salt and pepper, to taste
11. 2 cups of vegan ricotta cheese
12. 2 cups of vegan mozzarella cheese
13. 1/4 cup of chopped fresh parsley

Steps of Vegan Lasagna Recipe

# Steps
1. Preheat oven to 375°F (190°C).
2. Cook lasagna noodles according to package instructions. Drain and set aside.
3. In a large pan, heat some oil over medium heat. Add bell peppers, onions, garlic, and mushrooms. Cook until the vegetables are soft and tender, about 10 minutes.
4. Add diced tomatoes, tomato paste, basil, oregano, salt, and pepper to the pan. Simmer for 10 minutes.
5. In a separate bowl, mix the vegan ricotta cheese and 1 cup of the vegan mozzarella cheese together.
6. In a 9x13 inch baking dish, spread a thin layer of the vegetable sauce on the bottom.
7. Arrange a layer of lasagna noodles over the sauce, followed by a layer of the ricotta cheese mixture, and another layer of the vegetable sauce. Repeat this process until all ingredients are used, ending with a layer of the vegetable sauce.
8. Sprinkle the remaining 1 cup of vegan mozzarella cheese on top of the lasagna.
9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 25 minutes, or until the cheese is melted and the lasagna is heated through.
10. Let the lasagna cool for a few minutes, then sprinkle with fresh parsley and serve.
Tips:
  • You can use any vegetables you like in this recipe. Mushrooms, eggplant, and carrots would all be great additions.
  • If you don't have vegan ricotta cheese, you can substitute with tofu or cashew cheese.
  • To save time, you can use store-bought tomato sauce instead of making it from scratch.
