Steps of Vegan Lasagna Recipe

1. | Preheat oven to 375°F (190°C). |
2. | Cook lasagna noodles according to package instructions. Drain and set aside. |
3. | In a large pan, heat some oil over medium heat. Add bell peppers, onions, garlic, and mushrooms. Cook until the vegetables are soft and tender, about 10 minutes. |
4. | Add diced tomatoes, tomato paste, basil, oregano, salt, and pepper to the pan. Simmer for 10 minutes. |
5. | In a separate bowl, mix the vegan ricotta cheese and 1 cup of the vegan mozzarella cheese together. |
6. | In a 9x13 inch baking dish, spread a thin layer of the vegetable sauce on the bottom. |
7. | Arrange a layer of lasagna noodles over the sauce, followed by a layer of the ricotta cheese mixture, and another layer of the vegetable sauce. Repeat this process until all ingredients are used, ending with a layer of the vegetable sauce. |
8. | Sprinkle the remaining 1 cup of vegan mozzarella cheese on top of the lasagna. |
