3. 1 red onion, cut into chunks
4. 1 red bell pepper, cut into chunks
5. 1 green bell pepper, cut into chunks
6. 1 zucchini, cut into rounds
7. 8-10 cherry tomatoes
8. 1/4 cup olive oil
9. 1 tablespoon lemon juice
10. 1 tablespoon paprika
11. 1 tablespoon cumin
12. 1 tablespoon garlic powder
13. Salt and pepper to taste
14. Wooden skewers

1. Preheat your grill to medium-high heat or preheat your oven to 425°F.
2. In a small bowl, whisk together the olive oil, lemon juice, paprika, cumin, garlic powder, salt, and pepper to make the marinade.
3. In a large bowl, toss the tofu, chickpeas, red onion, red and green bell pepper, and zucchini with the marinade until everything is well coated.
4. Thread the vegetables, tofu, and chickpeas onto the wooden skewers, alternating between the different ingredients.
5. Place the skewers on the grill or on a baking sheet in the oven and cook for 10-15 minutes, turning occasionally, until the vegetables are tender and lightly charred.
6. Serve the vegan kebabs hot with a side of hummus, tzatziki sauce, or your favorite dipping sauce.
Tips:
  • Soak the wooden skewers in water for at least 30 minutes before using to prevent them from burning on the grill.
