1. 1 can of jackfruit, drained and rinsed
2. 1 onion, diced
3. 2 garlic cloves, minced
4. 1 tablespoon ginger, grated
5. 1 tablespoon curry powder
6. 1 teaspoon cumin
7. 1 teaspoon coriander
8. 1/2 teaspoon turmeric
9. 1/2 teaspoon paprika
10. 1/2 teaspoon salt
11. 1/4 teaspoon black pepper
12. 1 can of diced tomatoes
13. 1 can of coconut milk
14. 1 cup of vegetable broth
15. 2 cups of mixed vegetables (e.g. carrots, bell peppers, green beans)
16. 1/4 cup of fresh cilantro, chopped
17. Cooked rice or naan bread, to serve

# Steps
1. Heat some oil in a large pot or dutch oven over medium heat.
2. Add the diced onion and cook until it becomes translucent.
3. Add the minced garlic and grated ginger, and cook for another minute.
4. Add the curry powder, cumin, coriander, turmeric, paprika, salt, and black pepper, and stir until fragrant.
5. Add the diced tomatoes, coconut milk, and vegetable broth, and stir until well combined.
6. Add the drained and rinsed jackfruit and mixed vegetables, and bring the mixture to a boil.
7. Reduce the heat to low, cover the pot, and let the curry simmer for about 20-25 minutes or until the vegetables are tender.
8. Add the chopped cilantro and stir to combine.
9. Serve the jackfruit curry hot over cooked rice or with naan bread.
Tips:
  • You can use either fresh or canned jackfruit for this recipe, but make sure to choose young green jackfruit in water, not in syrup.
  • If you want a spicier curry, add some chopped fresh chili peppers or red pepper flakes to the skillet along with the other spices.
