1. 1 large onion, chopped
2. 1 red bell pepper, chopped
3. 1 yellow bell pepper, chopped
4. 1 zucchini, chopped
5. 1 eggplant, chopped
6. 1/4 cup olive oil
7. 1 tsp dried oregano
8. 1 tsp ground cumin
9. 1 tsp smoked paprika
10. 1 tsp garlic powder
11. Salt and pepper, to taste
12. 4 pita breads
13. Vegan tzatziki sauce (see recipe below)

Steps of Vegan Gyros Recipe

# Steps
1. Preheat your oven to 375°F.
2. Add the chopped onion, bell peppers, zucchini, and eggplant to a large bowl.
3. In a small bowl, whisk together the olive oil, oregano, cumin, paprika, garlic powder, salt, and pepper.
4. Pour the spice mixture over the veggies and toss until they are evenly coated.
5. Spread the veggies out on a baking sheet and bake for 25-30 minutes, or until they are tender and slightly browned.
6. While the veggies are roasting, heat your pita breads in the oven for a few minutes until they are warm.
7. To assemble the gyros, spread a generous amount of vegan tzatziki sauce on each pita bread.
8. Add a generous portion of the roasted veggies to each pita.
9. Fold the pita in half and enjoy your delicious and healthy vegan gyros!
Tips:
  • If you want to make your own pita bread, check out some recipes online or at your local library.
  • Make sure to use high-quality spices for the best flavor.
  • Feel free to add any other veggies you like to the mix, such as mushrooms or cherry tomatoes.
  • To make the vegan tzatziki sauce, combine 1 cup of vegan yogurt, 1/2 cup chopped cucumber, 1 tbsp lemon juice, 1 tbsp minced garlic, 1 tbsp chopped fresh dill, and salt and pepper to taste. Mix well and refrigerate for at least an hour before serving.
  • Leftover veggies can be stored in the fridge for a few days and used in salads, wraps, or as a side dish.
