1. In a large mixing bowl, whisk together the flour and salt.
2. Add the almond milk, melted coconut oil, maple syrup, and vanilla extract. Whisk until smooth.
3. Heat a non-stick skillet over medium-high heat. Lightly grease with cooking spray or a small amount of coconut oil.
4. Pour about 1/4 cup of batter into the skillet and immediately tilt the skillet in all directions to spread the batter into a thin and even layer.
5. Cook for about 1-2 minutes or until the edges of the crêpe start to lift from the skillet and the bottom is golden brown.
6. Flip the crêpe with a spatula and cook for another 1-2 minutes until the other side is golden brown.
7. Repeat with the remaining batter, greasing the skillet as needed.
8. Serve warm with your favorite toppings, such as fresh fruit, vegan Nutella, or vegan whipped cream.
Tips:
  • Make sure the batter is well mixed and free of lumps before cooking.
