4. 2 1/4 tsp active dry yeast

10. 1 tsp vanilla extract
11. 2-3 tbsp unsweetened almond milk

1. Warm the almond milk in a small saucepan over low heat until it reaches about 100°F. Remove from heat and stir in the vegan butter and sugar until melted.
2. Sprinkle the yeast over the mixture and let sit for 10 minutes.
3. In a large mixing bowl, whisk together the flour and salt. Add the yeast mixture to the bowl and mix until a dough forms.
4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
5. Transfer the dough to a greased bowl, cover with a towel, and let rise in a warm place for about 1 hour or until it has doubled in size.
6. Preheat the oven to 350°F.
7. On a floured surface, roll out the dough into a rectangle about 1/4 inch thick.
8. For the filling, spread the softened vegan butter over the dough, leaving a small border around the edges. Sprinkle the brown sugar and cinnamon evenly over the butter.
9. Roll up the dough tightly from one end to the other, and cut the roll into 1-2 inch slices.
