Steps of Vegan Christmas Pudding Recipe

---|---|
1. | Preheat the oven to 350°F (180°C). |
2. | In a large mixing bowl, combine the self-raising flour, vegetable suet, brown sugar, breadcrumbs, raisins, currants, mixed nuts, mixed candied peel, mixed spice, cinnamon, and nutmeg. Mix well. |
3. | In a separate bowl, mix the soy milk, baking soda, and vinegar. Add this mixture to the dry ingredients and stir until well combined. |
4. | Grease a pudding basin with vegan butter or oil. Spoon the mixture into the basin, making sure to press it down firmly. |
5. | Cover the basin with foil and secure it tightly with string or a rubber band. Place the basin in a large pot of boiling water and steam for 2-3 hours. |
6. | Check the water level periodically and add more as needed to prevent it from boiling dry. |
7. | Remove the basin from the pot and allow it to cool for a few minutes. Remove the foil and carefully turn the pudding out onto a serving plate. |
8. | To make the brandy sauce, melt the vegan butter in a saucepan over medium heat. Add the brown sugar and soy milk, stirring until the sugar has dissolved. |
9. | Bring the mixture to a boil, then reduce the heat and let it simmer for a few minutes, stirring occasionally. |
10. | Remove the saucepan from the heat and stir in the brandy. Serve the pudding warm with the brandy sauce. |
