Steps of Vegan Christmas Pudding Recipe

# Steps
1. Preheat the oven to 350°F (180°C).
2. In a large mixing bowl, combine the self-raising flour, vegetable suet, brown sugar, breadcrumbs, raisins, currants, mixed nuts, mixed candied peel, mixed spice, cinnamon, and nutmeg. Mix well.
3. In a separate bowl, mix the soy milk, baking soda, and vinegar. Add this mixture to the dry ingredients and stir until well combined.
4. Grease a pudding basin with vegan butter or oil. Spoon the mixture into the basin, making sure to press it down firmly.
5. Cover the basin with foil and secure it tightly with string or a rubber band. Place the basin in a large pot of boiling water and steam for 2-3 hours.
6. Check the water level periodically and add more as needed to prevent it from boiling dry.
7. Remove the basin from the pot and allow it to cool for a few minutes. Remove the foil and carefully turn the pudding out onto a serving plate.
8. To make the brandy sauce, melt the vegan butter in a saucepan over medium heat. Add the brown sugar and soy milk, stirring until the sugar has dissolved.
9. Bring the mixture to a boil, then reduce the heat and let it simmer for a few minutes, stirring occasionally.
10. Remove the saucepan from the heat and stir in the brandy. Serve the pudding warm with the brandy sauce.
Tips:
  • If you don't have a pudding basin, you can use a heatproof bowl or a metal coffee can.
  • You can add chopped candied orange peel or lemon peel to the pudding mixture for extra flavor.
  • Serve the pudding with vegan custard, vegan whipped cream, or brandy butter.
  • Leftovers can be stored in the refrigerator for up to 5 days or in the freezer for up to 3 months.
