8. 1/2 cup nutritional yeast
9. 2 tbsp vegan butter
10. 1 tsp dried sage

1. Preheat your oven to 400°F (200°C).
2. In a baking dish, toss the diced butternut squash with olive oil and season with salt and pepper. Roast in the oven for 20-25 minutes or until tender.
3. In a large saucepan or Dutch oven, heat some olive oil over medium heat. Add the chopped onion and cook for 5-6 minutes or until translucent.
4. Add the minced garlic and cook for an additional minute.
5. Add the Arborio rice and stir to coat in the oil. Cook for 2-3 minutes or until the rice begins to toast.
6. Pour in the white wine and cook for 1-2 minutes or until the wine has been absorbed.
7. Begin adding the vegetable broth, one ladleful at a time, stirring frequently and allowing each addition to be absorbed before adding more. Continue this process until the rice is cooked and has a creamy consistency (this should take about 20-25 minutes).
8. Once the rice is cooked, stir in the nutritional yeast, vegan butter, and dried sage. Add the roasted butternut squash and stir to combine. Season with salt and pepper to taste.
