4. 2 cloves garlic, minced
5. 1 small onion, diced
6. 1/2 cup chopped mushrooms
7. 1 tablespoon fresh thyme leaves
8. 1 cup cooked quinoa
9. 1/2 cup breadcrumbs
10. 1 sheet vegan puff pastry, thawed
11. 2 tablespoons non-dairy milk

1. Preheat the oven to 400°F.
2. Brush the beet slices with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for 20-25 minutes, until tender.
3. Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the garlic, onion, mushrooms, and thyme and sauté for 5-7 minutes, until the vegetables are tender.
4. In a large mixing bowl, combine the cooked quinoa, breadcrumbs, and sautéed vegetables.
5. Roll out the puff pastry on a floured surface and place the beet slices in the center. Spoon the quinoa mixture over the beets and fold the puff pastry over the top, tucking the edges under to seal.
6. Brush the puff pastry with non-dairy milk and make a few slits on the top for ventilation.
7. Place the beet wellington on a baking sheet and bake for 25-30 minutes, until the puff pastry is golden brown.
8. Let the wellington cool for a few minutes before slicing and serving.
