# Ingredients
1. 1 cup of vital wheat gluten
2. 1/4 cup of nutritional yeast
3. 1 tsp of onion powder
4. 1 tsp of garlic powder
5. 1 tsp of smoked paprika
6. 1/2 tsp of dried thyme
7. 1/2 tsp of dried rosemary
8. 1/4 tsp of cayenne pepper
9. 1/2 cup of vegetable broth
10. 2 tbsp of soy sauce
11. 2 tbsp of tomato paste
12. For the Mash:
13. 2 pounds of potatoes, peeled and chopped
14. 1/4 cup of vegan butter
15. 1/4 cup of plant-based milk
16. Salt and pepper to taste
17. For the Onion Gravy:
18. 2 tbsp of olive oil
19. 1 large onion, thinly sliced
20. 2 tbsp of all-purpose flour
21. 2 cups of vegetable broth
22. 2 tbsp of soy sauce
23. Salt and pepper to taste

Steps of Vegan Bangers and Mash Recipe

# Steps
1. Preheat the oven to 375°F (190°C).
2. In a large bowl, mix together the vital wheat gluten, nutritional yeast, onion powder, garlic powder, smoked paprika, thyme, rosemary, and cayenne pepper.
3. In a separate bowl, whisk together the vegetable broth, soy sauce, and tomato paste.
4. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
5. Knead the dough for a few minutes to develop the gluten.
6. Shape the dough into 4 sausages and wrap each sausage in aluminum foil.
7. Place the sausages on a baking sheet and bake for 30 minutes.
8. While the sausages are baking, prepare the mash. Place the chopped potatoes in a large pot and cover with water.
9. Bring the water to a boil and simmer for 15-20 minutes until the potatoes are tender.
10. Drain the potatoes and return them to the pot.
11. Add the vegan butter and plant-based milk to the pot and mash the potatoes until smooth and creamy.
12. Season the mash with salt and pepper to taste.
13. To make the onion gravy, heat the olive oil in a large skillet over medium heat.
14. Add the sliced onion and sauté for 5-7 minutes until the onion is soft and caramelized.
15. Sprinkle the flour over the onions and stir to combine.
16. Slowly pour in the vegetable broth and soy sauce, whisking constantly to prevent lumps.
17. Bring the gravy to a simmer and cook for 5-10 minutes until thickened.
18. Season the gravy with salt and pepper to taste.
19. Serve the vegan sausages with the mash and onion gravy on the side.

  • You can prepare the vegan sausages in advance and store them in the refrigerator until you're ready to bake them.
  • For a more intense flavor, you can add a bit of liquid smoke to the vegan sausages.
