How to make Pani Puri or golgappa ?

Panipuri is most favorite chat of mine. I am always ready to eat panipuri. Pani puri is the mouthwatering and most famous street food in India. Different region of India panipuri has different name. Panipuri is also known as golgappa and puchka. Here, I shared step by step recipe of panipuri or golgappa. Puris are made from all purpouse flou and sooji/rawa. Puris are readily available in market, You can buy from stores or you can also make it in home. I made a potato and black chick pea filling for pani puri. Another hot filling is made my white peas and potatoes and is called as Ragada. For ragada check this step by step recipe Ragada pani puri.

Ingredients for Pani Puri Recipe

Ingredients
Crisp puri of panipuri
1 cup Date and tamarind chutney
For potato Filling:
2 large potatoes, boiled
1 cup black chickpea
2 tbsp panipuri masala
1 tbsp mint and green chili paste
2 tbsp coriander leaves, chopped
Black salt as per taste
For Pani:
1 cup Mint leaves
1/4 cup Coriander leaves
6 green chili
3 tbsp lemon juice
½ tbsp black salt
Salt as per taste
2 tbsp panipuri masala

Steps of Pani Puri Recipe

# Steps
1. In a bowl mash the potatoes and add all the ingredients. Mix well and keep aside.
2. To make pani, In a Grinder take mint leaves, coriander leaves, green chili and grind to a fine paste
3. In a large bowl take six cup water and add grinded paste, black salt, panipuri masala, lemon juice and stir well. Put in the refrigerator to chill.
4. Take puri and break a small hole in centre of crisp puri, fill it with potato filling. Dip in pani and eat immediately.
5. For sweet and spicy taste, in puri fill potato mixture. Add little Date and tamarind chutney in the puri. Dip in pani and eat immediately.
