1. | Preheat your oven to 375°F (190°C). |
2. | In a large bowl, whisk together the flour and salt. Add the cold, cubed vegan butter and mix with a pastry cutter or your hands until the mixture resembles coarse crumbs. |
3. | Add the ice water one tablespoon at a time, mixing until the dough comes together into a ball. |
4. | Roll out the dough on a floured surface and transfer it to a 9-inch tart pan. Trim the excess dough and prick the bottom with a fork. |
5. | Bake the tart shell for 15 minutes or until lightly golden. |
6. | While the tart shell is baking, prepare the ratatouille filling. Heat the olive oil in a large skillet over medium heat. Add the diced eggplant and cook for 5 minutes, stirring occasionally. |
7. | Add the diced zucchini, yellow squash, red bell pepper, onion, and garlic to the skillet. Cook for an additional 10 minutes, or until the vegetables are tender. |
8. | Season the ratatouille filling with thyme, basil, oregano, salt, and pepper. |
9. | Pour the ratatouille filling into the pre-baked tart shell. |
10. | Bake the ratatouille tart for an additional 30 minutes or until the filling is golden brown. |
11. | Let the tart cool for 5-10 minutes before serving. |
