Pulao is a most popular dish in India. Vegetable pulao is one of the popular recipe made from rice and vegetable. There are different ways to make vegetable pulao.
Here, I shared my own recipe of vegetable pulao. It contains lots of vegetable and whole spice that makes vegetable pulav delicious. Vegetable pulao is a simplest, quick cooking recipe and suits in all occasion.

1½ cup basmati rice, soaked

1/4 cup shelled green peas
3.
¼ cup carrot, cut in to 1 inch piece
4.
¼ cup capsicum, cut in to 1 inch piece
5.
¼ cup French bean, cut in to 1 inch piece

¼ cup sweet corn
7.
1 medium onion, cut in to 1 inch piece
8.
¾ tbsp cumin seeds
9.
1 bay leaf
10.
4 cloves
11.
1 inch cinnamon stick
12.
4 black pepper
13.
3 tbsp oil
14.
¼ tbsp turmeric powder
15.
¼ tbsp lemon juice
16.
8- 10 roasted cashew nut

Green Coriander leaves, chopped

Salt to taste

Steps
1.
In pan cook rice with 3 cup water, salt, lemon juice and bay leaf.

Heat oil in a pan; add cumin seeds, cinnamon stick, cloves, pepper. When seeds crackle add onion. Sauté for a minute.

Add French bean, carrot, green peas, sweet corn, capsicum, turmeric powder, salt and mix well. Cover the pan and Cook it for 5 minute

Add boiled rice and mix well. Cook for 2 minute.
5.
Add the coriander leaf, roasted cashew nut and serve hot.
