1. 1 Tofurky Roast (14-16 oz)
2. 1/4 cup vegetable broth
3. 1/4 cup soy sauce
4. 2 tablespoons olive oil
5. 2 cloves garlic, minced
6. 1 tablespoon dried rosemary
7. 1 tablespoon dried thyme
8. Salt and pepper to taste

# Steps
1. Preheat oven to 350°F (180°C).
2. In a small bowl, whisk together vegetable broth, soy sauce, olive oil, minced garlic, dried rosemary, dried thyme, salt, and pepper.
3. Remove Tofurky roast from packaging and place in a baking dish.
4. Pour the marinade over the Tofurky roast, making sure to coat all sides.
5. Cover the baking dish with foil and bake for 30 minutes.
6. Remove the foil and bake for an additional 15-20 minutes, or until the Tofurky roast is browned and heated through.
7. Remove from the oven and let cool for a few minutes before slicing and serving.
Tips:
  • To make a gravy for the Tofurky Roast, simply pour the liquid from the baking dish into a small saucepan, and bring it to a boil over medium heat. Mix 1 tablespoon of cornstarch with 1 tablespoon of cold water, and whisk it into the boiling liquid. Cook for 1-2 minutes, or until the gravy has thickened.
