1. 1 cup (125 g) of all-purpose flour
2. 2 tablespoons (25 g) of sugar
3. 2 teaspoons (10 g) of baking powder
4. 1/4 teaspoon (1 g) of salt
5. 1 cup (240 ml) of non-dairy milk (such as almond or soy)
6. 2 tablespoons (30 ml) of vegetable oil
7. 1 teaspoon (5 ml) of vanilla extract

Steps of Vegan Pancakes

1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
2. In a separate bowl, whisk together the non-dairy milk, vegetable oil, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix, as this will result in tough pancakes.
4. Heat a non-stick pan over medium heat. Once hot, use a 1/4 cup (60 ml) measure to pour the batter onto the pan.
5. Cook the pancakes until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
6. Flip the pancake over and cook for another 1-2 minutes, or until golden brown.
7. Repeat with the remaining batter.
8. Serve the pancakes warm with your favorite toppings, such as syrup, fruit, or vegan butter.
