How to make Vegan Chili ?

Ingredients for Vegan Chili

# Ingredients
1. 1 tablespoon of olive oil
2. 1 large onion, chopped
3. 3 cloves of garlic, minced
4. 2 bell peppers, chopped
5. 1 jalapeno pepper, seeded and minced
6. 2 carrots, peeled and diced
7. 2 stalks of celery, diced
8. 2 tablespoons of chili powder
9. 1 tablespoon of cumin
10. 1 teaspoon of dried oregano
11. 1/2 teaspoon of cayenne pepper (optional)
12. 2 cans of diced tomatoes
13. 2 cans of kidney beans, drained and rinsed
14. 1 can of corn kernels, drained
15. Salt and pepper, to taste
16. 2 tablespoons of fresh cilantro, chopped
17. 1 avocado, diced (optional)
18. 1 lime, cut into wedges (optional)

Steps of Vegan Chili

# Steps
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the onion, garlic, bell peppers, jalapeno pepper, carrots, and celery and cook until softened, about 5 minutes.
3. Stir in the chili powder, cumin, oregano, and cayenne pepper (if using) and cook for another minute.
4. Add the diced tomatoes, kidney beans, and corn kernels to the pot. Season with salt and pepper to taste.
5. Bring the chili to a simmer and let cook for about 10-15 minutes, until the vegetables are tender and the flavors have combined.
6. Stir in the cilantro and remove from heat.
7. Serve with diced avocado and lime wedges on the side, if desired. Enjoy!
