How to make Vegan Chili ?
Ingredients for Vegan Chili

1. | 1 tablespoon of olive oil |
2. | 1 large onion, chopped |
3. | 3 cloves of garlic, minced |
4. | 2 bell peppers, chopped |
5. | 1 jalapeno pepper, seeded and minced |
6. | 2 carrots, peeled and diced |
7. | 2 stalks of celery, diced |
8. | 2 tablespoons of chili powder |
9. | 1 tablespoon of cumin |
10. | 1 teaspoon of dried oregano |
11. | 1/2 teaspoon of cayenne pepper (optional) |
12. | 2 cans of diced tomatoes |
13. | 2 cans of kidney beans, drained and rinsed |
14. | 1 can of corn kernels, drained |
15. | Salt and pepper, to taste |
16. | 2 tablespoons of fresh cilantro, chopped |
17. | 1 avocado, diced (optional) |
18. | 1 lime, cut into wedges (optional) |
Steps of Vegan Chili

1. | In a large pot or Dutch oven, heat the olive oil over medium heat. |
2. | Add the onion, garlic, bell peppers, jalapeno pepper, carrots, and celery and cook until softened, about 5 minutes. |
3. | Stir in the chili powder, cumin, oregano, and cayenne pepper (if using) and cook for another minute. |
4. | Add the diced tomatoes, kidney beans, and corn kernels to the pot. Season with salt and pepper to taste. |
5. | Bring the chili to a simmer and let cook for about 10-15 minutes, until the vegetables are tender and the flavors have combined. |
6. | Stir in the cilantro and remove from heat. |
7. | Serve with diced avocado and lime wedges on the side, if desired. Enjoy! |
