Steps |

Preheat the oven to 350°F (175°C). |

In a mixing bowl, combine the chopped walnuts, almonds, and pistachios, along with the sugar, cinnamon, and cardamom. Mix well. |

Melt the vegan butter in a small saucepan or in the microwave. |

Lay out the phyllo dough and brush each layer with melted vegan butter, until you have 8-10 layers. |

Spread a thin layer of the nut mixture over the phyllo dough, then add another layer of phyllo dough and brush it with melted vegan butter. Repeat this process until you have used up all the nut mixture. |

Add another 8-10 layers of phyllo dough on top of the nut mixture, brushing each layer with melted vegan butter. |

Using a sharp knife, cut the baklava into squares or diamond shapes. |

Bake the baklava in the preheated oven for 45 minutes, or until golden brown. |

While the baklava is baking, make the syrup. In a small saucepan, combine the sugar, water, agave syrup, lemon juice, and cinnamon stick. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the syrup thickens. |

Once the baklava is done, remove it from the oven and pour the syrup over it. Let it cool completely before serving. |
