Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. |

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. |

Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse sand. |

In a separate bowl, whisk together the milk and egg until combined. Pour the wet ingredients into the dry ingredients and stir until just combined. |

Turn the dough out onto a lightly floured surface and knead it gently a few times. Flatten the dough into a circle that is about 1 inch thick. |

Using a biscuit cutter or cookie cutter, cut out circles of dough and place them onto the prepared baking sheet. |

Bake for 18-20 minutes, or until the shortcakes are golden brown. |

While the shortcakes are baking, prepare the strawberry filling. In a medium bowl, mix the sliced strawberries with the granulated sugar. Let sit for about 10 minutes, until the strawberries release some of their juices. |

In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. |

To assemble the strawberry shortcakes, split the shortcakes in half. Spoon some of the strawberry filling onto the bottom half of each shortcake, followed by a dollop of whipped cream. Place the top half of the shortcake on top and add another spoonful of strawberries and a dollop of whipped cream. |
