2. 1/3 cup (80ml) melted coconut oil or vegetable oil
3. 1/2 cup (100g) granulated sugar
4. 1 teaspoon vanilla extract
5. 1 1/2 cups (180g) all-purpose flour
6. 1 teaspoon baking soda
7. 1/4 teaspoon salt
8. 1/2 cup (120ml) non-dairy milk (such as almond, soy, or oat)
9. 1/2 cup (50g) chopped walnuts (optional)

1. Preheat the oven to 350°F (175°C) and grease a 9x5 inch (23x13cm) loaf pan.
2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
3. Add the melted coconut oil, sugar, and vanilla extract to the bananas and mix until well combined.
4. In a separate bowl, whisk together the flour, baking soda, and salt.
5. Add the dry ingredients to the banana mixture and stir until just combined.
6. Pour in the non-dairy milk and mix until the batter is smooth.
7. If using, fold in the chopped walnuts.
8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
9. Bake for 45-55 minutes, or until a toothpick inserted into the center of the bread comes out clean.
10. Let the bread cool in the pan for 10 minutes before removing and transferring it to a wire rack to cool completely.
