# Steps
1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, cream together the vegan butter, granulated sugar, and brown sugar until light and fluffy.
4. Add the applesauce, vanilla extract, and almond extract to the butter mixture and mix until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Add the non-dairy milk and mix until a soft dough forms.
7. Roll the dough into balls and place them onto the prepared baking sheet, spacing them about 2 inches apart.
8. Flatten each ball slightly with your hand and decorate with vegan sprinkles.
9. Bake for 12-15 minutes, or until the edges are lightly golden.
10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Tips:
  • For a festive twist, you can add dried cranberries, chopped nuts, or vegan chocolate chips to the cookie dough.
  • To make the icing, simply mix together powdered sugar, plant-based milk, and vanilla extract until smooth.
