How to make Vegan jackfruit tacos ?

#	Ingredients
1.	2 cans of young jackfruit in water or brine, drained and rinsed
2.	1 small onion, diced
3.	2 garlic cloves, minced
4.	1 tablespoon olive oil
5.	1 tablespoon chili powder
6.	1 teaspoon smoked paprika
7.	1/2 teaspoon cumin
8.	1/2 teaspoon dried oregano
9.	1/2 teaspoon salt
10.	1/4 teaspoon black pepper
11.	1/2 cup vegetable broth
12.	1 tablespoon tomato paste
13.	1 tablespoon lime juice
14.	8-10 corn tortillas
15.	Toppings: chopped lettuce, diced tomato, avocado slices, cilantro, hot sauce (optional)

#	Steps
1.	In a large pan, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add the minced garlic and sauté for an additional 1-2 minutes.
2.	Add the drained jackfruit to the pan and use a spatula to break it into smaller pieces. Add the chili powder, smoked paprika, cumin, oregano, salt, and black pepper to the pan and stir to combine.
3.	Add the vegetable broth, tomato paste, and lime juice to the pan and stir. Reduce heat to low and let the jackfruit mixture simmer for 15-20 minutes, until the liquid has been absorbed and the jackfruit is tender.
4.	While the jackfruit mixture is simmering, warm the corn tortillas in a separate pan or in the oven.
5.	To assemble the tacos, place a few spoonfuls of the jackfruit mixture on a tortilla and top with chopped lettuce, diced tomato, avocado slices, cilantro, and hot sauce (if desired).
6.	Serve and enjoy!

Tips:

To make the recipe spicier, leave the seeds in the jalapeño pepper or add a pinch of cayenne pepper.
Jackfruit can be found in most Asian grocery stores or in the canned goods section of your local grocery store.
You can also add other toppings to your tacos, such as sliced radishes, shredded cabbage, or vegan sour cream.
