1. 4 large bell peppers
2. 1 cup quinoa
3. 2 cups vegetable broth
4. 1 can black beans, drained and rinsed
5. 1 cup corn kernels
6. 1 small onion, diced
7. 3 cloves garlic, minced
8. 1 teaspoon chili powder
9. 1 teaspoon cumin
10. 1/2 teaspoon paprika
11. Salt and pepper to taste
12. 1/2 cup vegan shredded cheese (optional)
13. Fresh cilantro for garnish

# Steps
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.
3. Rinse quinoa and add it to a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until cooked.
4. In a large skillet, sauté onion and garlic until fragrant, then add corn and black beans. Add in chili powder, cumin, paprika, salt and pepper. Mix well and cook for another 2-3 minutes.
5. Add the cooked quinoa to the skillet with the vegetables and mix well.
6. Stuff each bell pepper with the quinoa mixture and sprinkle with vegan shredded cheese if desired.
7. Bake in the preheated oven for 25-30 minutes or until the peppers are tender and the cheese is melted.
8. Serve hot, garnished with fresh cilantro. Enjoy!
Tips:
  • You can use any color of bell pepper for this recipe, but red, orange, and yellow peppers tend to be sweeter and more flavorful than green peppers.
