1. 1 block of firm tofu, drained and pressed
2. 1 zucchini, sliced
3. 1 red bell pepper, sliced into bite-sized pieces
4. 1 red onion, sliced into bite-sized pieces
5. 1/4 cup olive oil
6. 2 tablespoons balsamic vinegar
7. 1 tablespoon dijon mustard
8. 1 tablespoon maple syrup
9. 2 cloves garlic, minced
10. 1/2 teaspoon salt
11. 1/4 teaspoon black pepper
12. 8-10 skewers, soaked in water for at least 30 minutes

1. Cut the tofu into bite-sized pieces and set aside.
2. In a small bowl, whisk together the olive oil, balsamic vinegar, dijon mustard, maple syrup, garlic, salt, and pepper.
3. Thread the tofu, zucchini, red bell pepper, and red onion onto the skewers, alternating between the different vegetables and the tofu.
4. Brush the skewers with the marinade, making sure to coat all sides.
5. Preheat a grill or grill pan over medium-high heat.
6. Once the grill is hot, place the skewers onto the grill and cook for 8-10 minutes, flipping the skewers halfway through, until the vegetables are tender and the tofu is lightly browned on all sides.
7. Serve the tofu and vegetable skewers hot with your favorite dipping sauce, if desired.
Tips:
  • Make sure to soak the wooden skewers in water for at least 30 minutes before threading the tofu and vegetables onto them. This will prevent them from burning on the grill.
