In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. |

In a separate bowl, whisk together the non-dairy milk, vegetable oil, and vanilla extract. |

Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix, as this will result in tough pancakes. |

Heat a non-stick pan over medium heat. Once hot, use a 1/4 cup (60 ml) measure to pour the batter onto the pan. |

Cook the pancakes until bubbles form on the surface and the edges start to look set, about 2-3 minutes. |

Flip the pancake over and cook for another 1-2 minutes, or until golden brown. |

Repeat with the remaining batter. |
